I think I might regret posting this recipe because it is so good I feel I should be keeping it a secret… but I love you all so much I guess I’ll be generous :).
This dessert is so beautifully sweet and delicious you might not believe me if I tell you it contains only healthy and whole ingredients. What I love most about this new lifestyle is finding new healthy ways of preparing old favourites, and especially sharing them with my friends and family, and seeing their faces of joy. Eating healthy food doesn’t have to be boring or limited, and I hope to convince you with recipes like this!
CREAMY CHOCOLATE AND GINGER PUDDING
- 2 ripe spotty bananas
- 3 pitted Medjool dates or 2 tbsp maple syrup
- 250 ml coconut milk
- 3 tbsp cacao powder
- 1 ripe avocado
- 2 cm piece of fresh ginger
- Pinch of salt
- 2 tsp chia seeds
STEP BY STEP
- Make sure you use ripe bananas (you can know if the glucose in them has fully developed when they are covered in brown spots, as shown above, that is when they are perfectly sweet).
- Blend all the ingredients in a powerful blender until completely smooth. Serve in bowls or glasses and place in the fridge for 1 hour to solidify. Serve topped with chia seeds or fresh berries.
